蒜泥白肉
Cold Pork with Garlic Sauce

豬肉 1 斤
蔥 1 條
薑 3 片
調味料 份量
老抽 1 湯匙
麻油 1/2 湯匙
鹽 1/4 茶匙
辣油 1 湯匙
糖 1 茶匙
上湯 2 湯匙
蒜蓉 1 湯匙
蔥粒* 1 湯匙
做法
- 豬肉洗淨,煲滾水,加薑、蔥和少許鹽,用中火煮約半小時,熟透後,待冷透。
- 肉冷透後,用利刀片成薄片,排放碟上。
- 將調味料及蒜泥拌勻,淋在肉面上,即可供食。

Seasonings Quantity
- dark soy 1 tbsp.
- sesame oil 1/2 tbsp.
- salt 1/4 tsp.
- chilli oil 1 tbsp.
- sugar 1 tsp.
- fine stock 2 tbsp.
- mashed garlic 1 tbsp
- diced spring onion 1 tbsp.
Method:
- Rinse pork. Put whole piece of pork in hot water and add in ginger, spring onion and a pinch of salt. Boil over medium heat for about half hours. Leave it to cool.
- Cut pork into thin slices and arrange on a plate.
- Mix well seasonings and mashed garlic. Pour over the pork. Serve.
