Applying the salt evenly to the chicken for 1 hr. before washing.
Soak the chicken with the Chinese white wine for 1 hr., mix the sugar with dark soy sauce and apply them evenly to the chicken for certain times. Then, insert the sectioned spring onion with 3 tbs. of chopped garlic & ginger into the chicken.
Put 3 cups of water into the steamer. Put little oil onto the skin of the chicken before placing it into the steamer. Steam the chicken for 10 mins. after hissing with medium heat.
Chopped the chicken when it has been cool and serving with the chopped garlic & ginger sauce added with boiling oil.
