| ### 做法  1． 肉 排 洗 淨 瀝 乾 ，用 醃 料 拌 勻 ， 醃 二 十 分 鐘。  2． 肉 排 醃 好 後 ， 加 生 粉 1 1/2 湯 匙 拌 勻 。 燒 滾 油 ， 將 肉 排 炸 約 五 分 鐘 收 火 ， 肉 排 被 熱 油 浸 至 金 黃 色 後 取 出 ， 瀝 去 油 。  3． 鑊 放 入 麻 油 少 許 、 1/2 茶 匙 糖 、 蔥 粒 、 薑 蓉 及 蒜 蓉 ， 將 炸 好 的 肉 排 放 回 鍋 炒 勻 ， 盛 起 即 成 ， 可 醮 椒 鹽 一 同 進 食 。 |
