#  空汙嚴重免疫系統差 年菜富含維生素A與C

隨著空氣污染，在PM2.5越發嚴重的情況下，民眾除了戴上厚厚的口罩，或是避免出門以外，難道就沒有其他方法來強化自身的免疫系統嗎？

營養師薛伊均, 奇美醫學中心營養科介紹幾道年菜，讓民眾在新年不僅能吃到好吃的年節料理，更能從這些料理中得到強化身體的維生素。

**維生素A和C保護呼吸道**

人體有許多對抗病菌的防禦系統，而呼吸道也是其中之一，為了保持呼吸道的健康，平時除了戴口罩防止異物以外，更可以透過攝取新鮮蔬果來吸收維生素。而且每種維生素對生體的作用也都不同，像是維生素A就能夠強化呼吸道的上皮細胞，讓呼吸道保持正常作用。而維生素C則能夠促進細胞間的膠原蛋白生成，以達到皮膚、血管、黏膜的結合，而且更能幫助人體內的干擾素製造用以攻擊病菌。

**新鮮蔬果入菜 美味又健康**

維生素的攝取不僅從市面上販售的維生素能得到，在日常生活中的各類食物就能吃得到。想要攝取維生素A可以從紅、黃、橘以及綠色的食物上取得，像是：南瓜、地瓜等**澱粉類食物**；紅蘿蔔、韭菜黃、大番茄、九層塔、菠菜、茼篙、蘆筍等**蔬菜類**；橘子、柳丁、木瓜、哈密瓜、番茄等**水果類**都是很好的食物來源。而維生素C的食物大多是綠色，像是：花椰菜、豌豆莢、香菜、小黃瓜、蘆筍、菠菜、綠豆芽、白菜、甜椒等蔬菜類，以及芭樂、奇異果、檸檬、草莓、紅柿還有柑橘等水果類。

薛伊均利用市售方便購買到的年菜禮盒來教導婆婆媽媽們，如何在準備年菜的過程中增加紅黃綠，搭配豐盛大餐的同時又可以兼具營養及美味，讓團圓年菜上餐桌時色香味及營養都能俱全。營養師更提醒，高血糖者，需注意食物份量之攝取；慢性腎病者，請注意每日可食入的蛋白質量，以及高鉀、高磷食物的選擇，避免腎臟的過度負擔；高血脂者則需注意紅肉類、海鮮類等食物勿過度攝取；湯湯水水所含普林、鉀離子以及油脂量也不容小覷，請慢性疾病病人，淺嘗即可。
