- 青口肉（綠殼青口--已煮熟）450克
- 洋蔥碎 1顆
- 檸檬（檸皮削成皮碎及檸檬汁）1個
- 香芹碎 2 湯匙
- 羅勒碎 2 湯匙
- 糖 1 茶匙
- 炸粉漿 適量
- 蛋白 3隻

1. 將一半青口肉放入攪拌器，碎成免治，放入大碗內
2. 將另外一半的青口肉略為切碎，與洋蔥、檸皮碎、檸汁、香芹碎、羅勒碎和糖加入大碗內
3. 用鹽和胡椒調味
4. 將材料拌勻，並加入足量炸粉漿，令材料混合一起
5. 將蛋白打至企身，與粉漿拌勻
6. 燒熱平底鑊，倒入少量菜油
7. 將粉漿逐湯匙放入平底鑊，煎至金黃色
8. 上菜時，擠少量檸檬汁及點上蛋黃醬作點綴

- 花生油 2 湯匙
- 紅洋蔥（切成楔子）1/2個
- 紅辣椒（連籽切碎）1/2隻
- 蒜（拍碎）2瓣
- 薑（去皮及切片）1片(2厘米)
- 紹興酒 2 茶匙
- XO醬 3 湯匙
- 生抽 2 茶匙
- 糖 2 茶匙
- 龍蝦湯汁 100毫升
- 芝麻油 1/2 茶匙

1. 鑊落油燒熱，爆香洋蔥、辣椒、蒜和薑
2. 加入紹興酒、XO醬、生抽、糖、龍蝦湯汁和芝麻油
3. 將材料煨熟，收乾水至三分之一
4. 用密篩過濾醬汁，並放涼
