- 基圍蝦 400克
- 烏龍茶葉 25克

1. 先將烏龍茶葉用滾水泡開，留50克茶水，將泡開茶葉取出備用，燒鍋下油至150度油溫將茶葉炸脆，撈起瀝油備用。
2. 用剪刀剪去基圍蝦鬚、爪，並在肚中間直界一刀至頭處，燒鍋下油至180度溫時下蝦炸至外殼酥脆撈起瀝油備用。
3. 用50克茶水加入雞粉，鹽，糖調味，再燒鍋下少許油即下炸好的蝦，下湯汁猛火炒勻，再下炸脆茶葉鏟出裝碟便可。
