- 羊肚菌2朵
- 鮮雞腿菇50克
- 鮮金菇25克
- 露筍2條
- 煙肉2片
- 魚膠50克
- 蛋達盞1個

- 桂魚肉搞爛成茸，加入鹽，雞粉，生粉拌勻至起膠成魚膠備用，將魚膠擠成小丸子，壓扁成圓形，再將煙肉拍上乾生粉，捲入魚膠，成金錢型備用。
- 將羊肚菌，雞腿菇，金菇用上湯，加入蠔油，雞粉，鹽，糖煨過，撈起。燒鍋下少許油，將菇菌，爆香打茨，裝入蛋撻盞在內，灼好露筍拌。
- 燒鍋至熱，將煙肉釀魚膠煎至兩面金黃色至熟鏟出裝碟，蛋達盞裝菇菌，露筍拌即可。
