- 澳州啤梨1個
- 西芹50克
- 紅蘿蔔50克
- 菠菜汁50克
- 蝦仁50克
- 蛋白100克
- 蔥白粒5克
- 紅蘿蔔汁25克
- 三文魚子10克

- 先將蛋白用筷子打勻，取一半加入紅蘿蔔汁，菠菜汁分別打勻，加入少許濕生粉，燒熱煎鍋下少許油，將蛋白煎成蛋白皮備用.
- 將啤梨去皮切成細丁粒，西芹，紅蘿蔔，蝦仁分別切成細丁粒，燒鍋下少許油，下蔥白及丁粒料，猛火炒勻即下少許上湯，用鹽，糖，雞粉，蠔油調味，並用少許濕生粉打茨鏟出成熟餡料備用.
- 將煎好的蛋白皮，包入熟餡料，用九菜葉紮實成石榴形，入蒸櫃蒸7分鐘取出，裝碟，並用50克上湯加入雞粉鹽調味用少許濕生粉打茨，淋入石榴球上便可。
