- 鮑 魚 四 兩
- 海 蔘 五 兩
- 冬 菇 兩 半
- 金 華 火 腿 二 兩
- 薑 數 片

- 先 將 乾 鮑 放 入 鍋 內 ， 加 水 煮 沸 ， 然 後 在 滾 水 中 浸 軟 ， 約 四 至 五 小 時 後 ， 取 出 切 片 備 用
- 海 蔘 用 水 浸 透 ， 起 油 鑊 ， 爆 香 薑 蔥 ， 加 上 湯 或 開 水 煨 透 海 蔘 備 用
- 金 華 火 腿 去 肥 ， 切 片 備 用
- 冬 菇 用 水 浸 軟 ， 去 蒂 備 用 。 以 上 各 物 弄 妥 ， 一 同 倒 入 燉 盅 內 ， 加 水 至 八 成 滿 ， 最 好 淋 以 上 湯 ， 加 薑 片 後 ， 用 紗 紙 封 蓋 ， 置 入 滾 水 鍋 內 ， 隔 水 燉 三 至 四 小 時 ， 然 後 取 出 調 味 享 用

1. 有 感 冒 發 熱 ， 傷 風 咳 嗽 未 癒 ， 不 宜 飲 鮑 魚 湯 ， 患 胃 病 的 人 ， 由 於 鮑 魚 肉 難 消 化 ， 所 以 不 宜 吃 ， 只 宜 飲 湯 。
2. 蒸 前 在 鮑 魚 上 切 幾 刀 ， 會 令 鮑 魚 更 入 味 。
