- 鯧魚(平魚)1條、人參粉1茶匙、鹽、胡椒、人參油各少許、檸檬1個
- 沙拉：鮮參1根、菜豆1/2杯、芹菜1/2杯、胡羅蔔、洋蔥、西葫蘆各1/2杯
- 沙司(調味汁)：人參油2茶匙、檸檬汁1茶匙、蒜末、鹽、胡椒粉各少許

- 人參切成5mm厚的圓片，菜豆用熱水煮出來，芹菜、胡羅蔔、洋蔥、西葫蘆切成長寬各1cm，厚5mm的塊，然後按烹調所需時間的長短順次將胡羅蔔、人參、芹 菜、洋蔥、西葫蘆、菜豆下鍋煸炒，調拌好適量的沙司下入鍋裏，並加入鹽和胡椒
- 將鯧魚去肚、洗淨、除去水分後，在魚身上切2、3條刀紋，抹上人參粉、鹽、 胡椒。煎鍋燒熱，抹上油，將魚置其上煎大致2分鐘，當兩面呈黃褐色時，將火調小，繼續煎。取一隻盤子，上面鋪一層沙拉後，將熟好的鯧魚放到上面
- 上桌前再 用檸檬片裝飾一下即可
