- 醬油1/4杯
- 清酒（料酒）2大勺
- 白糖2大勺
- 蘋果1/2個
- 洋蔥1/2個
- 辣尖椒2個
- 生薑1塊
- 尾參20g

 ![](https://www.foodno1.com/images/menu/fno1-method.png)- 將鰻魚去頭，剖腹去內臟，取出骨頭後，魚身切成5~6cm長的塊。
- 取一隻鍋，裏面加水後，把鰻魚脊骨折成小段，連同洋蔥、蔥根、蘋果、辣尖椒、生薑、醬油、 清酒一起放入鍋裏燉，水分收縮至一半時，加入尾參繼續燉，直到水分再次減半，這樣就做成了濃稠的調味醬汁。
- 將鰻魚放到烤架上，一邊烤一邊在魚身上塗抹醬汁，正反兩面，反復塗抹三次。
