1. 雲 耳 浸 軟 洗 淨 ； 洋 蔥 切 成 角 片 ； 勝 瓜 刨 去 硬 角 ， 開 四 邊 再 切 角 ； 蝦 肉 洗 淨 ， 索 乾 水 份 ， 用 生 粉 生 抽 略 醃 。
2. 燒 熱 鑊 ， 加 點 油 先 將 蝦 泡 熟 ， 撈 起 ， 再 爆 香 洋 蔥 ， 加 入 雲 耳 和 一 些 湯 略 煮 ， 加 入 勝 瓜 同 炒 ， 加 點 花 雕 酒 炒 至 八 成 熟 時 才 加 入 蝦 肉 。
3. 把 餘 下 的 湯 和 所 有 調 味 料 調 勻 ， 邊 炒 邊 倒 入 蝦 肉 內 ， 待 炒 至 菜 式 乾 身 帶 茨 即 成 。
