| - 人參切成細絲。 取鱈魚，切出兩片(每片50g) 或一片(重100g的)， 薄薄地撒上一層鹽、胡椒、人參粉放一邊。將芹菜、胡蘿蔔、西葫蘆切成絲，分開來炒，加鹽、胡椒粉調好味後，放在一起拌勻。將牛油紙折成兩半，剪出較手掌大一些的心形。在平底鍋裏放油加熱後，將鱈魚片兩面輕微煎一下。在剪好的牛油紙中間位置，放入炒好的菜絲，並將鱈魚、人參絲依次加在上面，然後象包餃子那樣將牛油紙合起來，邊緣用小刷抹上蛋清粘合。縫合在一起的邊緣部分再重疊著折起來，邊折邊在表面刷上蛋清，直至完全封閉嚴實(反復兩次)。然後放到預熱到200~400度的烤箱裏烘烤10~15分鐘，至牛油紙成淺褐色。此時牛油紙呈膨脹狀，整個兒取出裝在盤子裏上桌。將牛油紙十字模樣扯開後即可食用，你可以馬上感受到人參的芬芳撲鼻而來。 |
