#  烤鱈魚佐人蔘炒蔬菜

| - 鱈魚150~170g、西葫蘆1個、紅甜椒1個、鮮參2根、洋蔥1個、蒜4瓣、balsamic義大利醋1/2茶匙、extravirgin低酸性純橄欖油1/2杯、人參粉1茶匙、鹽和胡椒粉各少許 |

| - 將西葫蘆中間有子的部分掏出，切成長5cm、厚5mm的條。甜椒和人參也切成同樣的大小。洋蔥二等分後也同樣切條。蒜切成薄片。將切好的蔬菜分開來炒，下鹽和胡椒調味。蔬菜炒好後合在一起拌勻在室溫下放置約2個小時，待用。將鹽、胡椒和人參末撒在鱈魚上，入味後，在熱煎鍋裏灑上油，兩面煎出來。（如果魚塊較厚，可先在烤箱裏烤至九分熟後再煎。）將炒好的蔬菜再次下鍋，快速炒出，鋪在盤底，鱈魚放上面。最後在剛剛用過的炒菜鍋裏放1茶匙橄欖油加熱，滴入balsamic義大利醋後立刻澆在鱈魚上，這道料理即完成。 |
