#  醋醃蒜

中國家庭有醃製"醋醃蒜"習慣，又叫"臘八蒜"，在臘月將大蒜去皮、洗淨、剝瓣，倒入米醋，封入小壇，除夕時開封，就做成青翠宜人、蒜香可口的"臘八蒜"。 "臘八蒜"製作過程不見陽光，產生的綠色，是大蒜綠色素。

- 鮮蒜頭200千克 (約200-300粒)
- 陳醋適量
- 鹽10千克
- 紅糖20千克

#### 鮮蒜頭處理法

1. 鮮蒜頭剝去外皮，切去頭部和尾部。儘量處理蒜乾淨及晾乾後再醃製；或者用淡鹽水浸泡半天，可起到消毒的作用。

#### 醃製處理

1. 取一個乾淨的容器，可用熱水燙一下殺菌，抹乾；將剝好的新蒜放入容器中，每一斤蒜加二兩紅糖/片糖，放入米醋剛過蒜頭即可，放入少許食鹽，放鹽的目的就是協調糖和醋的作用，使口感甜而不膩。。醃製一個月就可以吃了，時間越久越好吃。

#### 大蒜的好處：

大蒜是一種強力的殺菌物質，對細菌、黴菌都有強大的殺滅作用。同時，大蒜中的大蒜素還具有抑制多種腫瘤細胞的作用，特別是幫助抑制胃癌細胞的增殖。此外，大蒜還有一定的免疫增強作用，比如在動物試驗中有促進自然殺傷細胞的活性，提高腹膜巨噬細胞的活性，促進淋巴細胞轉化等作用。

坊間流傳，在擔心剩菜剩飯沒有熱透，或者擔心吃涼拌菜、外購食品可能受到病菌污染時，父母也會督促子女吃生大蒜。

按中國陝西省相關測定報告的結果，配羊肉泡饃吃的糖醋蒜中含糖約5%，含酸2%，含鹽5%左右。口感以酸為主，鹹甜適口。家裡用純醋醃的臘八蒜含糖和鹽都很少，大約是酸2%，糖2%，鹽2%的樣子。中國農業大學的研究發現，糖醋蒜的提取液具有一定的抗氧化活性，而且對HL-60人白血病細胞、MDA-MB人乳腺癌細胞、BGC-823人胃癌細胞都有明顯的抑製作用。經過泡製，蒜中的保健成分仍然能夠部分發揮作用。惜並不是每個人都能忍受生大蒜那強烈的味道
