- 因梅菜有沙，最好浸水浸過夜後衝洗淨，半邊鯇魚片及蔥段放在魚身下
- 梅菜的處理：猛火下少許油先將梅菜爆香炒乾身，用少許生抽混和水份及糖，在魚面上調味，小許鹽花，料酒，胡椒粉，先將淨魚用旺火蒸至八成熟，如圖中只有半邊魚身的話( 約蒸六分鐘提起蓋，再將炒過的梅菜倒在魚面上，再蒸三至四分鐘便可
- 注意咸味濃度：炒梅菜時不必下鹽，因梅菜巳醃咸，最好用甜梅菜，同時生抽亦咸，亦可先試梅菜的味道是否恰當，味道隨即加減之，另外如愛吃咸魚的話，可用咸魚与新鮮鯇魚同蒸( 叫作咸鮮) 別具另一風味
