#  聞癌色變！ 吃什麼可遠離惡性腫瘤？

惡性腫瘤再度蟬聯十大死因首位，令很多人聞癌色變，也因此造成市面上聲稱「抗癌」的保健食品，無不大賣。其實，只要飲食內容做些改變，就可有效降低罹患癌症的機率。

**防癌從生活做起**

營養室陳香吟主任說，世界衛生組織即曾提出預防癌症，從生活就可以做起，如不抽菸、吃得正確、持續身體活動，加上維持適當體重，就可以減少60％至70％的罹癌機率，另外，每天至少攝取五份蔬菜水果，也可以降低20％癌症風險。

**選擇正確食物有助遠離癌症**

既然正確選擇食物可以預防癌症的發生，到底哪些食物有防癌作用呢？陳香吟表示，最健康的飲食結構組合是：水果、蔬菜、堅果、全穀類、魚、低脂乳製品和少量瘦肉。

(1) 大豆：多吃非發酵的黃豆類食物，得到乳癌、大腸癌及前列腺癌的機率會降低。但發酵類大豆食物如味增、豆腐乳、醬油，因有黴菌及黃麴毒素污染，少吃為宜。

(2) 茶：茶葉中含有兒茶酚等多種強烈抗氧化成分，以綠茶含量最多，烏龍茶次之，紅茶最少。其它號稱草藥茶，因成份不明，最好不要輕易嚐試。

(3) 大蒜及洋蔥類：大蒜、洋蔥在流行病學調查上都發現有降低胃癌及大腸癌的作用。還有降低膽固醇及抗凝血的保護作用，包括青蔥、韭菜等含有強烈氣味的青菜也具有類似功能。但只吃大蒜精或大蒜藥片是沒有功效的。

(4) 十字花科蔬菜：凡是深黃或紅色的蔬果都富含β類蘿蔔素，紅蘿蔔是其中代表。吃大量胡蘿蔔素蔬果的人得到肺癌及表皮癌症機率較少。但要富含纖維質和維他命Ｃ的蔬果才有效，若長期只吃胡蘿蔔素藥片，反而增加肺癌的發生。

(5) 薑：薑含有薑黃素，所以有抑制突變的抗癌作用。但薑生吃會對食道產生刺激，也有抗凝血作用，因此調理食用較安全，而胃潰瘍或要手術的人要小心使用。

(6) 富含纖維素的食物：食物纖維可以減少糞便在腸道的停留時間，減少致癌物質與腸黏膜接觸的機會。如芹菜、大蒜、青椒、芫荽等富含纖維質食物，都可以稀釋脂肪濃度，以減少致癌物質對人體代謝的影響。（文章授權提供／優活健康網; 阮綜陳香吟 - 合醫院營養室主任）
