#  吃菜好處多 如何洗才乾淨？

蔬菜富含維生素、纖維質、熱量也很低！現代人講究養生，愈來愈多人菜比肉吃的多；但日前農藥開放議題鬧得沸沸揚揚，查驗蔬菜農藥殘留量超標也時有所聞，讓人愈吃愈害怕。醫師強調，掌握切、洗、泡3步驟，使用流動清水15分鐘，蔬菜都能洗乾淨。

#### 農藥中毒恐昏迷

臨床毒物與職業醫科主任楊振昌表示，葉菜類蔬菜最容易遭蟲蛀蝕，通常都會使用農藥，常見包括陶斯松、大滅松及歐滅松等有機磷殺蟲劑，人體大量食用可能中毒，出現分泌物增多、噁心、嘔吐、腹瀉、流汗等症狀，嚴重甚至發生抽筋、呼吸抑制、昏迷。

#### 各農藥可容許攝取量不同

各農藥每日可容許的攝取量不同，陶斯松為0.01mg/kg、大滅松為0.002mg/kg、歐殺松為0.03mg/kg。以大滅松為例，60公斤成人須每日食入0.67公斤的高麗菜才會中毒。

#### 3步驟清洗蔬菜最乾淨

楊振昌建議，清洗蔬菜應切、洗、泡，第一，切掉蒂頭、根部及去除壞葉；第二，大量清洗2至3次；第三，用流動水浸泡15分鐘，確實遵循3步驟，大部分的蔬菜都能清洗乾淨。(楊振昌 - 台北榮民總醫院臨床毒物與職業醫科主任)
