許多民眾習慣前一晚先將水果切好放進冰箱，隔天再拿出來享用，到底營養素會不會隨之打對折？而隔夜飯是許多上班帶飯族、家中烹調者及聚會宴席打包者常面臨的吃與不吃的困擾，是否有傳聞所說的隔夜飯會致癌的疑慮？

**水果放冰箱冷藏 營養素易流失？**

根據研究結果發現，切好的水果直到儲存的第6天，維生素C、類胡蘿蔔素才有顯著流失，但最多不超過25%，多酚類更是沒有明顯流失，雖然切好的水果外觀並不如現切來得好看，但其實營養素的流失並沒有視覺效果來的嚴重。

**裝在密封容器再放進冰箱 3天內吃完**

營養科營養師朱恩琪建議，將切好的水果裝在密封的容器後再放進冰箱裡，且需在3天內食用完畢，因為水果暴露在高溫及空氣中易導致細菌的孳生，比起營養素的流失，危害身體的風險更是大，所以記得一次只裝當餐可食用完的份量才是安全又健康！

**隔夜飯致癌？ 目前尚無根據**

部分蔬菜的硝酸鹽含量較高，以葉菜類為主如：莧菜、青江菜、高麗菜、油菜等，加工肉品、海鮮如：香腸、臘肉、火腿、鹹魚等，都有可能讓硝酸鹽轉化為有致癌風險的亞硝酸鹽，雖然以正常飲食中要達到危害人體的劑量有相當大的差距，但仍建議以上食物應優先當餐先吃完。

若要放至隔夜，則以瓜果類、菇類、海藻及根莖類蔬菜較為適合，肉類及海鮮一定要煮熟透，並且不建議涼拌菜，因為在製作過程中易遭受細菌汙染而變質，若保存條件不當也易造成食物中毒。

**隔夜飯建議最慢2天內食用完畢**

隔夜飯雖不至於致癌，但反覆加熱除了讓口感較差，抗氧化營養素也較易流失，以營養角度來說，當餐食用完畢是最佳，若無法當餐食用完的話也建議最慢2天內一定要食用完畢。

**隔夜飯搭新鮮水果一起吃**

朱恩琪營養師建議食用隔夜飯時可以搭配富含抗氧化物質的新鮮水果一起食用，如：奇異果、芭樂、柳丁、木瓜、芒果、番茄等，除了可以消除自由基，更可以增加膳食纖維量及飽足感，減少便秘！(朱恩琪 - 奇美醫學中心營養科營養師)
