忙碌的現代人追求眼前的目標，最缺「時間」與「金錢」，排在最後的往往都是「健康」。充滿生理及心理壓力的生活，讓五臟六腑失去平衡，無法完成本份內的工作職掌，更別期待他們提高工作效能，把健康顧好。

肝臟是默默工作卻不太鬧脾氣的器官，卻容易因為不注意而超量工作，一旦肝臟罷工，健康將難以挽回。陳韻帆營養師指出，老祖宗常說春天是一年之始，身體細胞因天暖而開始活絡，正是調理肝臟好時機。

**選對護肝食材 替肝臟養好養滿**

「肝臟」是身體重要的解毒器官，而肝臟的解毒主要分為2個階段：第一階段，有毒物質經過肝臟內的解毒酵素後，會產生「水溶性的中間產物」，此產物具有傷害性，必須盡快進入第二階段的解毒。第二階段，將「水溶性的中間產物」進一步代謝後，轉成水溶性物質，並透過排便、排尿排出體外。

**抗氧化食材降低自由基危害**

在肝臟解毒過程中會產生許多自由基，陳韻帆營養師建議，多攝取具有抗氧化食材來降低自由基的危害，像是優質的蛋白質、維生素B群、維生素C、大蒜、青椒、十字花科蔬菜及芝麻，都可以降低體內自由基，保護肝臟，避免有毒物質的傷害。

陳韻帆提醒，養肝護肝當然不僅止於春天，而是春天相對有一年之始之意，如果能在春天替自己擬定一個養肝計畫，從現在開始打造一整年的健康基底，相信也會比較有實踐的動力。

**芝麻入菜好養生 萃取芝麻素更有感**

針對春季養肝，陳韻帆營養師建議可以選擇豬肝、瘦豬肉佐以五色蔬菜，搭配芝麻醬，或是選用以芝麻入菜的料理，例如炒豬肝灑上芝麻、黑芝麻豆漿等，透過食療緩步養生。

然而現代人生活忙碌多外食，或是怕吃多了芝麻也吃進高卡路里，則可以考慮以健康食品的方式補充，選擇芝麻中僅含不到百分之一，卻是最關鍵的抗自由基成分「芝麻素」，都可以達到事半功倍的效果。日本研究更指出，持續攝取芝麻素，護肝效果更加分、更有感。
