#### 火鍋湯頭這樣選

許多人吃火鍋，除了大快朵頤各種美味的食材外，更喜歡喝火鍋湯。湯頭是火鍋的精髓，嗜辣的人喜歡麻辣鍋、咖哩鍋，養生的人特愛藥膳鍋、牛奶鍋。營養師吳玲怡建議，吃火鍋最好選擇低脂清湯，例如昆布湯、蔬菜湯都不錯。

#### 自製健康火鍋湯

吳玲怡表示，自製火鍋湯頭其實很簡單，將大量新鮮蔬菜加水熬煮即可，例如白菜、洋蔥、玉米、胡蘿蔔、白蘿蔔、番茄、菇類及海帶等，約熬煮半小時就能使用。

#### 兩種人別喝火鍋湯

吳玲怡營養師指出，許多人喜歡喝火鍋湯，但各類食材經過長時間熬煮，會釋出大量的油脂、鈉、磷等，罹患高血壓、腎臟病的患者千萬別喝，以免鈉攝取過量，增加腎臟負擔。 (吳玲怡-台北市立聯合醫院仁愛院區營養師)
