#  湯與湯圓分開煮 避免吃下防腐劑

元宵節全家大小最期待吃湯圓，但你知道怎麼煮湯圓、吃下肚才安心嗎？醫師指出，坊間湯圓可能含有防腐劑，建議烹煮時要開蓋、湯圓水不要喝；若要喝湯，建議另外再煮一鍋湯。

#### 添加防腐劑 增加湯圓保存

顏宗海指出，坊間的湯圓為了增加保存期限，製造時都添加適量防腐劑，常見包括苯甲酸、己二烯酸、去水醋酸；雖然毒性較低，不過，人體食用過量，仍會刺激腸胃道，引起噁心、嘔吐的副作用。

#### 水煮、開蓋 減少防腐劑

苯甲酸、己二烯酸、去水醋酸等防腐劑，屬於水溶性，經過高溫烹煮可溶出部分殘留，建議煮湯圓時開蓋、煮熟後撈起，並將湯圓水倒掉，可減少攝取防腐劑，或是另外再煮一鍋湯搭配。

#### 小孩子少吃紅色小湯圓

顏宗海也提醒，花生、芝麻、豆沙等包餡湯圓，含磷量頗高，洗腎病患應與結磷劑一起吃，可將食物中的磷結合後排出體外；而小孩子儘量不要吃紅色湯圓，以防止吃入人工色素。
