元宵佳節即將到來，如果把湯圓、元宵當做飯後點心一顆接著一顆，加上鹹湯、糖水混著喝，小心恐致腸胃打結，營養師提醒，鹹湯圓不用高湯煮、甜湯圓不用糖水煮，改良傳統口味，不僅能嘗鮮，也能保持腸胃清爽無負擔！

#### 改變湯底 預防攝取過多熱量

每年的元宵及冬至分別都要吃一次湯圓，然而小湯圓卻隱藏大負擔，遵循哪些小撇步才能吃得健康呢？衛生福利部南投醫院營養師蔡玉思表示，喜歡吃湯圓的民眾，為了預防攝取過多熱量，可以從湯底開始改變。

#### 大骨湯用昆布 甜湯用牛奶、代糖、豆漿、綠(紅)茶代替

鹹湯圓的大骨湯可利用昆布湯、蔬菜湯、薑湯代替，昆布含有藻膠及大量礦物質，薑湯可益氣補身，兩者皆是熱量較低的食材，小湯圓的傳統湯底如八寶粥、花生湯、紅豆湯等也可利用低脂牛奶、代糖、無糖豆漿、綠(紅)茶代替。

若是包餡甜湯圓，因為內部已有甜餡，建議煮熟即可食用，無須另外再加甜湯。另外包餡湯圓本身就屬高油脂點心，建議只要在滾水中將湯圓煮熟、撈起，再放進碗中，加入湯底，就可避免因為直接放在湯裡煮吸收過多的油脂。

#### 加入當季蔬果 避免攝取過多油脂

配料部分，在昆布湯內加入當季蔬菜如蕃茄、紅白蘿蔔、高麗菜、洋蔥等一起調味，甜湯圓則可搭配適量水果一起吃。蔡玉思營養師表示，4顆元宵的熱量約等於一碗白飯的280卡！為了避免攝取過多不必要的澱粉及油脂，小湯圓的攝取量一天至多10顆，包餡元宵一天最多4顆。

#### 避免甜湯、鹹湯混著喝

另外，家中的老人腸胃蠕動較慢，食用時可以減量、切小塊方便入口，盡量避免油炸湯圓以減少胃部不適的情形，切忌飯後不要多吃、避免一碗甜湯、一碗鹹湯混合著喝。只要遵循醫師、營養師小叮嚀，就能吃的開心，簡單顧健康！(文章授權提供／優活健康網)
