你吃過樹薯嗎？樹薯有種特殊的口感，QQ的，非常的彈牙；而且往往是製作成樹薯簽或是樹薯粉，有不少粉圓是以樹薯粉製成；營養師指出，樹薯屬澱粉類，等同於吃飯。也就是說，喝了珍珠奶茶，就要記得少吃點飯！

**澱粉分為直鏈澱粉與支鏈澱粉**

洪可珎, 國泰醫院營養組營養師表示，樹薯屬澱粉類食物，澱粉有分為直鏈澱粉與支鏈澱粉，通常支鏈的比例高，就好像吃糯米，GI(升糖指數)值較高，而樹薯的支鏈澱粉比例就較高；且根據美國農業部資料顯示，每100公克樹薯，就有160大卡的糖份。

**GI值較高易使血糖上升**

與同樣含有澱粉的地瓜與南瓜相較，樹薯的糖份是較為豐富，在太平洋島國斐濟，就是以樹薯為主食，且居民1天要吃5餐樹薯，造成當地每3人就有1人患糖尿病；所以，營養師洪可珎指出，若是吃進過多樹薯，食量沒有控制好，就會使血糖容易上升。

**全穀雜糧根莖類皆屬主食**

現代人為了減少熱量攝取，會少吃白米飯而改吃全穀雜糧，而樹薯也是全穀雜糧根莖類，也就是所謂的主食；洪可珎營養師進一步指出，全穀雜糧根莖類包括糙米、紅豆、綠豆，山藥、地瓜、馬鈴薯、南瓜與樹薯等，對熱量攝取上而言，都和白米飯相同，但是多元化食物，營養會更完整且均衡。

**40克樹薯等於1/4碗飯**

大家都知道白米飯是澱粉，為了身材，往往會捨白米飯，但是卻對珍珠奶茶愛不釋手；殊不知，珍奶裡的珍珠就是用樹薯製作而成。所以，即使是不吃白米飯，樹薯製成的珍珠也有熱量，洪可珎營養師說，每100公克樹薯，就有碳水化合物38克，如果吃40克樹薯，就相當於吃1/4碗飯。

**含有氰酸毒 必須煮熟才能吃**

洪可珎強調，樹薯主要是吃其塊根，在熱帶國家較常食用，台灣南部也有人會吃，由於其根中含有氰酸有毒性物質，輕微會有噁心嘔吐，嚴重會有神經毒性造成呼吸衰竭，所以一定要完全煮熟才能食用。
