#  吃燕窩養生 聰明挑、正確煮是關鍵

燕窩是珍貴食材，可養顏美容，也是滋補聖品，不少產後婦女、大病痊癒的人，常用來調理身體。不過，醫師提醒，燕窩烹調溫度過高，會破壞營養及活性成分，建議隔水烹煮，並將溫度控制在攝氏75度C。

#### 燕窩富含生長因子

腎臟科醫師江守山指出，現代醫學研究發現，燕窩含有細胞分裂激素及高單位上皮生長因子EGF，能促進人體細胞再生、組織生長及強化免疫功能，不僅能夠養顏美容，也可幫助產後婦女身體修復、補充元氣。

#### 控溫隔水文火慢煮 燕窩活性不流失

江守山說，燕窩的活性物質上皮生長因子EGF，在攝氏80度C以下才能保持活性，因此不建議以煲燉、直接煮沸的烹調方式，但加熱又必須高於攝氏72度C，以免細菌感染，因此烹煮方式及溫度控制是關鍵，建議溫度控制在攝氏75度C，以隔水文火的方式慢煮。

#### 分辨真正的燕窩有訣竅

江守山醫師提醒，坊間不肖業者常使用豬皮、白木耳、海藻膠，甚至化學物品混充燕窩；事實上，真正的燕窩外觀應絲絲分明，而不是塊狀或片狀，由於含有豐富的蛋白質，會帶有自然的蛋香味，若是聞起來無味、刺鼻味可能為假貨混充，口感應是絲絲的滑順感。
