藜麥的好處多不勝數，不但高纖維、低脂低熱量，蛋白質更可與牛肉相比，營養價值滿分。
藜麥有三種：紅、白、黑，三者的營養和益處十分相似。白藜麥是最常見品種，紅藜麥和黑藜麥則是數量較少，價錢也比較高。但三種的營養價值也不會因顔色差異而有所不同。至於烹調時間，白藜麥需要時間最短，而黑藜麥的烹調時間是最長。
白藜麥囗感像芝麻一樣鬆脆；黑藜麥和紅藜麥比白藜麥來的甜，比較有嚼勁。而纖維最高的是紅藜麥。
香港導演嚴浩更推崇藜麥可以幇助減肥瘦身、控制三高。天天吃藜麥，糖尿、高血壓、排便、脾胃等，也會有一定改善。
