端午節吃粽應景，儘管市售粽子種類眾多，許多人仍喜歡自己動手包粽，不過食材該怎麼挑選呢？營養師陳淑美指出，粽葉太綠、蝦米太紅、菜脯太白，可能添加二氧化硫增色漂白，建議購買前張大眼睛、用鼻子聞，顏色鮮艷過白或有刺鼻味的食材都不要買。

**食安頻傳 食材自己買**

近年食安問題頻傳，買外食都會擔心吃得不安心。端午節即將到來，不少家庭主婦準備自己包粽子，陳淑美, 台北市立聯合醫院松德院區營養科營養師指出，包粽子會用到的粽葉、糯米、蝦米、菜脯、榨菜、乾栗子等食材，都容易有化學添加物，選購時要特別小心。

**粽葉太綠 有化學藥劑**

陳淑美舉例，粽葉顏色太綠或聞起來有刺鼻味道、蝦米顏色太紅、菜脯或榨菜顏色太白，可能添加螢光增白劑、色素或二氧化硫等添加物，容易傷腎、傷肝；而糯米發黃變黑、破碎有粉末，乾栗子有孔洞，則代表不新鮮。

**包粽安心食材這樣選**

如何選購安心的包粽食材呢？陳淑美營養師建議，粽葉應帶有清香且無破損，使用前先以冷水浸泡半天，再以乾淨的布或海綿擦拭洗淨；糯米要完整飽滿、粒型均一，且有光澤的米粒品質較好；蝦米的顏色應為淡橘紅色且無異味；菜脯或榨菜，使用前應反覆清洗，並浸泡30分鐘，可去降低鹽分及添加物。
