#  橄欖油好健康？ 營養師：分級很重要

橄欖油的因為富含單元不飽和脂肪酸以及橄欖多酚，許多臨床實驗發現，有助於心血管疾病的預防，因此被奉為油品界的聖品。但你要知道! 橄欖從栽種、採收、儲存、榨油、裝瓶與運送等過程，都會影響橄欖油的品質，大賣場裡陳列了百百種橄欖油，選對才能吃得健康。

**橄欖油的分類與等級**

依照國際橄欖油委員會I.O.C（international Oliver Council）的定義，最適合食用的橄欖油分為三類：(1) Extra virgin olive oil特級初榨橄欖油、(2) Virgin olive oil 初榨橄欖油、(3) Ordinary olive oil 普通初榨橄欖油，三者間的差別在於其酸價（油品中游離脂肪酸的含量）小於0.8%、2.0%、3.3%，要製作品質優的初榨橄欖油，一定要全程控制在28°C以下，才能宣稱為冷壓製程。

**品油師是關鍵**

除了透過化學儀器的分析外，品油師更是在評鑑油品優劣的關鍵角色。依照O.N.A.O.O.透過感官品油的評鑑，規範：有果香，沒有任何負面感官者，才能宣稱Extra virgin olive oil，而負面感官低於3.5者，屬於Virgin olive oil，高於3.5者屬於Lampante（義大利原意是燈油的意思，就是品質差，只能拿去點燈用），不可直接食用。榨油廠完成榨油後，橄欖油裝瓶公司通常會聘請品油師，透過感官評鑑(嗅覺與味覺）來確認橄欖油的品質與等級。

**Lampante低級橄欖油去哪了？**

部分廠商利用除臭與精煉的技術，將不適合食用的Lampante等級的冷壓初榨橄欖油，混合一點點extra virgin olive oil，成為市面上的Pure olive oil也就是「純橄欖油」，而初榨後的果渣還可以透過化學溶劑的萃取，製作成Refined olive oil，就是俗稱的「精製橄欖油」。

慎選橄欖油 聞出好健康

現代商人將Lampante純化、脫臭、精緻，變成純橄欖油，這樣的加工過程，橄欖油中許多對身體有益的營養素、多酚類、抗氧化物就會慢慢消失，只吃到『油』而已。因此建議，最好只買Extra virgin olive oil，買回去後先聞聞看是否真有果香或青草香，好的特級初榨橄欖油聞起來會像果汁一樣清香。（資料來源：張益堯營養師）
