滋味酸甜的鳳梨，吃下肚暑氣就消了大半，夏天吃正是時候！但好吃的鳳梨怎麼挑選呢？專家建議，手指輕彈果實，聲音清響似打鼓為成熟果，肉質細緻、甜度及風味尤佳，行家都這樣挑選。

**鳳梨盛產期 國人偏愛金鑽鳳梨**

每年3至7月為鳳梨盛產期，台灣以屏東縣、嘉義縣、台南市、高雄市及南投縣為主要產區。農委會台南場場長王仕賢表示，目前約有5種鳳梨品種，其中民眾偏愛「金鑽鳳梨」，其果肉呈金黃色，肉質細緻、酸甜適宜，而俗稱土鳳梨的開英種鳳梨，多做來製作加工產品，如鳳梨酥、鳳梨醬等。

**膳食纖維多 鳳梨酵素助消化**

王仕賢強調，鳳梨含有豐富的醣類、維生素B1、B2、維生素C、鉀、錳及膳食纖維等，能維持身體正常機能並有助腸胃健康、排便順暢，尤其所含的鳳梨酵素能分解蛋白質，加速腸胃消化，也適合用來料理促進肉類嫩化，增加鮮嫩口感。

**挑選好吃鳳梨 專家教訣竅**

好吃的鳳梨如何挑選呢？王仕賢指出，可依個人口味選擇，用手指輕彈果實，若聲音清響似打鼓，稱為「鼓聲果」，是接近完全轉黃的成熟果，肉質細緻、甜度及風味尤佳，且耐貯放；若聲音悶沉似彈打手臂者為「肉聲果」，果肉多汁低酸、纖維稍粗，較不耐放、最好馬上食用。

**吃多刮舌刺痛 沾鹽降低不適感**

不過不少民眾吃鳳梨感覺刮舌刺痛，王仕賢表示，鳳梨果肉、果皮含有豐富的蛋白酶分解酵素，會破壞口腔黏膜，一旦吃多了就會有刺痛感，建議沾鹽或將果皮削乾淨，而腸胃功能不佳或罹患胃潰瘍者，則應適量食用。
