#  吃水果可以取代吃青菜？ 小心營養失衡

「每天蔬果579」是許多人奉為健康飲食的準則，但是蔬菜不若水果香甜可口，讓許多挑食的人望而怯步，腦筋動的快的人就聯想到，如果單吃水果多一點，是不是就可以補足不吃蔬菜的營養呢?

營養師劉怡里, 台安醫院, 說明，水果是不能取代蔬菜的，一般吃水果的時候都會削皮，所以一些在表皮上的植化素、花青素、類黃酮素或是一些β-胡蘿蔔素等等…就會沒有攝取到，但是如果吃蔬菜的話，民眾習慣用油炒，油可以保存蔬菜裡面的植化素，所以可以完整的吸收。

營養師也建議，成人一天的蔬果建議量，蔬菜部份至少要一點五碗，水果的話大概是以女生兩個拳頭大這樣子的量，民眾可以自行評估蔬菜水果攝取量是否足夠，重點是兩者不能相互取代的。
