**何謂蛋黃卵磷脂？**

何謂蛋黃卵磷脂？專家表示，雉科動物的蛋黃精萃出的脂質統稱為蛋黃油。但是蛋黃油這個名詞目前被視為機能性食品的一個名稱，主要是由於蛋黃油含卵磷脂之故。若要嚴格區分，則卵磷脂含量占30%左右的產品稱為蛋黃油，而超過30%以上的產品則稱為蛋黃卵磷脂。

最早在唐朝藥性論中，卵磷脂就有明顯的效果記載，而古醫書《本草綱目》中也早記載這類萃取物。鑽研蛋黃卵磷脂在有機保健市場多年的業者George指出，由於蛋黃卵磷脂可以降低外周血管中的膽固醇，因此有「血液的清道夫」之稱，有很好的降血脂作用。

**卵磷脂與蛋白質、維生素並列第三營養素**

市面上蛋黃卵磷脂多來自大豆與雞蛋萃取， George表示，蛋黃油含豐富「卵磷脂」，與蛋白質、維生素並列「第三營養素」。現代社會不管是升學考試、成長期的青少年、忙碌上班族導致工作長期熬夜者、壯年保健、熟齡保養與愛美女士，甚至孕婦、哺乳媽咪等，常因作息或壓力導致營養不均衡，坊間許多琳瑯滿目的營養保健食品又不知如何挑選，蛋黃卵磷脂是相當不錯的選擇。
