#  菇菇好營養 哪些人不能吃？

在菜市場或是超市，菇類食材林林總總，尤其是最近蔬菜價格高漲，菇類就更是受到青睞。營養師指出，菇類含有豐富營養成份，但是痛風及腎臟病人就不適宜食用，以免使病況加重。

**所含蛋白質是蔬菜2至3倍**

周婉琪, 台北慈濟醫院營養師表示，菇類是低熱量高纖維食材，而且所含蛋白質比一般蔬菜高，大約每100公克所含蛋白質是蔬菜2至3倍，且不含膽固醇；而且菇類還含有9種人體必須胺基酸，以及礦物質和維生素B群、菸鹼酸，尤其是鉀離子含量最高。

**香菇所含膳食纖維最多**

以乾香菇而言，經由太陽曬乾之後，還含有維生素D，有助於體內鈣質吸收；周婉琪營養師指出，香菇營養成分與熱量都比較高，而且膳食纖維也最高，每100公克含有3.8克膳食纖維，其次是杏鮑菇，每100公克含有3.1克。至於一天所需膳食纖維則是應攝取25-35公克。

**珊瑚菇含豐富葉酸**

含有豐富葉酸的是珊瑚菇，葉酸對於神經管的形成有重要作用，孕婦在懷孕期間缺乏葉酸會影響胎兒神經系統的發育。周婉琪營養師指出，大約每100公克珊瑚菇，有137.7微克葉酸。此外，菇類含有豐富多醣體，可以調節免疫功能，只是實證醫學不多，大多是細胞與動物研究。

**痛風和腎臟病不建議食用**

雖然菇類營養成分豐富，但是普林含量高，有尿酸高痛風病人就不適合食用。周婉琪說，痛風若是在急性期就一定不可以吃，不是急性期可以一週吃二次，至於有菇類的湯頭，就不建議食用；另外，因為菇類鉀離子含量高，腎臟病人也不宜食用。

**腸胃疾患須少量食用**

周婉琪營養師強調，若是有腸胃消化性潰瘍以及腸狹窄，食用菇類容易脹氣，使腸蠕動變快，易出現腸阻塞，必須要少量食用；因為菇類富含膳食纖維，是高渣食材，會容易留滯在腸道中，會影響大腸鏡檢查，所以也不宜在檢查之前食用。

**菇類食譜提供參考**

周婉琪營養師並分享幾道菇類食譜，提供民眾參考。**大頭菜炒雙菇**，最近是大頭菜盛產期，以大頭菜炒金針菇與香菇，經濟又好吃；**磨菇炒甜豆莢和黃彩椒**，放些黑胡椒可提升風味；還有**鴻喜菇炒蔥蛋**以及**鴻喜菇燴豆腐**，**杏鮑菇炒韭菜花和豆乾**，**金針菇涼拌青木瓜和小番茄**，添加泰式醬或和風醬都很好吃。
