小時候總聽到長輩說，多吃胡蘿蔔可以讓眼睛漂亮，現在有醫學證實此說法了。日前美國哈佛大學醫學院研究指出，多吃「類胡蘿蔔素」蔬果（如青花菜、菠菜）的人，視網膜衰退程度比同齡者輕微，而葉黃素、蝦紅素、玉米黃素，就是類胡蘿蔔素大家族的成員之一。

**五大營養素可護眼 蝦紅素為最**

研究更指出，花青素、葉黃素、玉米黃素、β-胡蘿蔔素和蝦紅素，這五大營養素都有護眼功效。而其中，又以蝦紅素的抗氧化性最高，不僅能消除眼部疲勞、舒解不適，還可避免黃斑部提早退化（AMD）、青光眼，也可保護糖尿病患者眼部健康，遠離失明。

研究解釋，當眼睛露在陽光、紫外線下，會導致自由基產生對眼部造成傷害。研究也表示，蝦紅素比β-胡蘿蔔素能夠更有效的避免紫外線所帶來的氧化傷害。 對此，陳沛仁醫師, 童綜合醫院眼科主任表示，根據目前學界研究，就「抗氧化」效果，蝦紅素確實比葉黃素來得好，在動物實驗中可知蝦紅素對於青光眼、眼壓高的患者有緩解的效果。醫師解釋，不論是葉黃素或是蝦紅素，都有抗藍光、紫外線、抗氧化等作用，目前也有研究指出可降低黃斑部病變、降低白內障生成的機會。

**眼睛保護要從飲食均衡開始**

而一般人以為眼睛痠澀、乾眼症就要吃葉黃素，陳沛仁醫師強調，乾眼症患者應可多攝取不飽和脂肪酸類食物，並非葉黃素，如亞馬仁、杏仁、酪梨、鮭魚與橄欖油等。此外，如研究所述，多吃β-胡蘿蔔素也可護眼，但也有研究指出，吸菸者攝取β-胡蘿蔔素會增加罹患肺癌的風險。

醫師呼籲，民眾要護眼，就要從平時的均衡飲食做起，各色蔬果都應攝取、外出時配戴太陽眼鏡保護眼睛、隔離紫外線，若眼鏡有不適時，應立即至眼科檢查，才能避免黃斑部病變等傷害。
