選筍新鮮最重要 在大家享受美食的同時，該如何辨別竹筍製品的鮮度？或是否含過多食品添加物「亞硫酸鹽」(用量以二氧化硫殘留量計)的疑慮，食品藥物管理署提醒大家，選購前要多了解筍乾的相關資訊。二氧化硫一般可隨尿液排出體外，但人體若過量攝入，可能會導致嘔吐，更甚者有些人會產生過敏反應，如氣喘、呼吸困難等現象。

選購竹筍及其製品時，可以根據以下資訊進行挑選，並依建議進行烹調前的處理原則：

**新鮮竹筍**

1\. 選購無出青(筍尖處呈綠色)的竹筍，在烹調時較無苦味。

2\. 外表肥短，呈現牛角狀彎曲者最佳。

**醃漬竹筍**

1\. 選購筍乾顏色為淡黃色者為佳，若顏色呈現死白，或是出現刺鼻味則不要購買。

2\. 選購白筍絲及筍角時，應挑選白色偏暗的色澤，如果產品顏色非常亮白，或有刺鼻味出現，需避免購買。

**烹調前浸泡為上**

2\. 醃漬竹筍製品購買後應先浸泡清水 30 分鐘以上，並重複換水數次，或者在加熱烹煮時，不加蓋讓二氧化硫揮發，即可減少食入過量的二氧化硫。
