#  芋頭豬筋肉

接近秋天是芋頭季節，吃芋頭扣肉多了, 不妨一試這不太肥膩的菜色! 本菜有助強化骨骼及關節健康，緩解急性關節炎和大便乾燥問題。

2~3人份

#### 材 料：

- 芋頭 300g /半斤
- 五花肉 750g
- 蔥 1 根切蔥花
- 蒜 2瓣

#### 調味料：

- 醬油/生抽 2 湯匙
- 冰糖 1~2小粒
- 水 500ml
- 料酒/紹興酒 2茶匙
- 胡椒粉 少許

#### 做 法：

1\) 熱鍋/鑊後加油，(轉中慢火) 放入芋頭塊煎，煎至表面有些微焦後,盛出備用(或可用油炸)

2\) 豬筋肉切塊，入乾鍋中煎炒至金黃，熄火取出備用

3\) 加蒜炒香，加入醬油及冰糖，炒出醬香味，加入胡椒粉、水及酒煮開後，放入豬筋肉(轉小火)，加蓋繼續燜煮至肉軟

4\) 再加入芋頭塊

5\) 繼續煮至芋頭鬆軟即可

豬筋肉：是(豬腱肉/前腿肉/腱子肉/老鼠肉)帶有筋的部份；含豐富硫化軟骨素、鈣質和膠質，有助強化骨骼及關節健康。

芋頭：含大量澱粉外，還含一種其他食物很少含的黏性蛋白(所以生芋頭在削皮後，摸上去會有一種黏手的感覺)。有益胃通便、解毒功效，可有效治療或緩解急性關節炎、乳腺炎、大便乾燥等多種常見病症。
