#### 勿吃得過熱

火鍋湯底溫度可高達120℃，而口腔、食道和胃黏膜一般只能耐受50℃至60℃，這樣很容易燙傷口腔、食管和胃黏膜。

#### 忌飲火鍋裡的湯

火鍋配料多是海鮮、青菜、肉類等，這些材料混合在一起，經過較長時間熬製，湯裡含較多「嘌呤」，易引發痛風問題。

#### 忌吃的時間太長

一定要控制時間，否則胃液、膽汁、胰液等不停分泌，腺體得不到正常的休息，導致胃腸功能混亂而發生腹痛、腹瀉。

#### 要徹底煮熟食物

一定要把食物徹底煮熟才可以吃，因為食物在火鍋中若滾的時間過短，吃起來雖然鮮嫩爽口，卻殺不死肉中潛藏的寄生蟲。

#### 銅製火鍋要徹底清潔

銅銹或會溶解於食物之中，或會引起食物中毒。因此，再次使用火鍋前一定要用布浸點醋，再加點鹽擦拭，把銅銹徹底洗淨才用。

#### 食物不可放在銅製火鍋中過夜

浸在火鍋隔夜的食物會含有過多的銅氧化物，吃後容易引起中毒，輕者頭暈、噁心，重者造成心、肝及腎的損害。

#### 辣得適量、調味料要清淡

辣的調味料容易使人內生燥熱，也會刺激腸胃擴張，損害腸胃黏膜。所以患有胃炎、胃潰瘍的人，應盡量少吃辣椒、蒜、蔥、沙茶醬或是辣椒醬等調味料，忌吃麻辣火鍋。

#### 勿吃得過量

肉類含脂肪較高，多吃會造成營養和能量過剩，吃得過飽也會使胃腸功能受累，有損健康。

#### 多配些蔬菜解熱氣

含維生素及葉綠素，其性多偏寒涼，將其作為火鍋料，不僅能消除油膩，補充營養，還有清熱、解毒、去熱氣等作用。

#### 放些紓解熱氣的食物

此類食物包括豆腐、白蓮、生薑、番茄、白菜、黃瓜、苦瓜以及各類食用菌等。豆腐是含有石膏的豆製品，可發揮石膏的清熱、解熱氣的作用。生薑不去皮放在火鍋裡，因姜皮辛涼，有降火降熱的作用。

#### 吃水果紓解熱氣

水果性涼，能清涼、解毒、去熱氣。餐後只要吃上一兩個如雪梨、香蕉等的水果，能紓解熱氣。
