芝士火鍋 (法語：Fondue au fromage)是一種瑞士火鍋， 做法是把芝士煮溶， 以麵包沾來吃。 瑞士盛產芝士， 當地的芝士火鍋可以用多達五至六種的芝士來做， 種類十分繁多。 瑞士的冬天既漫長又寒冷， 一夥人圍著吃熱騰騰的芝士火鍋， 當然特別有感覺， 香港人慣了吃傳統的「打邊爐」， 偶然轉轉口味也是一大樂事。

芝士火鍋色澤黃澄澄，溫暖的感覺和濃郁的香味十分誘人，只要你遠遠嗅到，就難以抗拒，食慾隨之而來。拿起專用的長柄叉子，串著法國麵包或其他材料來吃，一定十分滋味，以下就讓我們為你提供一個簡易的芝士火鍋食譜，讓你在家中也可領略異地的瑞士口味：

- Gruyere芝士 250克
- Emmental芝士 250克
- 法國麵包 一條
- 生果(可隨意選擇) 若干

- 蒜蓉 1茶匙
- 胡椒粉 1茶匙
- 麵粉 1/2茶匙
- 白酒 250毫升香檳 250毫升
- 黑胡椒碎 1/2克
- 栗粉 50克
- 白酒 適量

1\) 將蒜蓉、胡椒粉、麵粉、黑胡椒碎、香檳及250毫升白酒一同放入鍋內煮熱

2\) 將芝士碎粒加入已煮熱的酒內、調較至慢火，立即用木匙羹，以8字形輕輕攪拌，直至所有芝士完全溶解，煮成芝士汁
3\) 用適量的白酒開勻栗粉，然後逐漸加入芝士汁內，直至煮成糊狀
4\) 燃點酒精爐，將小火鍋放上，用叉子串著法國麵包粒或其他材料，再沾上小火鍋內的芝士漿汁來吃

1\) 以上各種材料的份量，可按個人喜好再自行調較

2\) 食譜內所用的芝士可以在一些貴價超市內找到，若要減省時間，亦可到大型的日本超市，購買現成的瑞士芝士火鍋漿汁湯底（產品名稱亦叫Fondue）
3\) 切芝士或磨芝士的時候，手要乾淨和保持乾爽
4\) 芝士很易凝固，過程中必須以慢火烹調，並不時以木匙羹攪拌，否則會令芝士燒焦
5\) 酒的份量請按個人喜好再作調校，多下酒的話，酒味濃，芝士漿汁的濃度也較稀，反之亦然
6\) 吃芝士火鍋時，不要飲凍飲，否則容易在腸道內形成塊狀物，引致消化不良
