牛脷酥係中國廣州及香港一帶專賣粥及油器的食店才可吃到，同油炸鬼類類似。

用麪粉做。將麪粉搓成兩條，頭尾黐埋在中間加糖，放落油鑊度炸，炸彴發後形狀就好似牛脷咁，因而叫"牛脷酥"。因有糖，故有甜甜哋味道。

因牛脷酥通多數響粥舖先有得賣，究竟是係同粥一齊食，定是在炸油炸鬼時同時炸牛脷酥即無從考究。
