美國報導指出，食用全水果時，因為水果中的糖分是隨著水果的纖維同時進入體內，身體對於糖分的吸收速度相對緩慢，產生的結果與蜂蜜、蔗糖及楓糖等不同。

**攝取糖分過多 易罹患第二型糖尿病**

專家表示，進食時，食物中如果含有碳水化合物，人體的消化系統會把它轉化為葡萄糖，隨之進入血管。當血糖增加時，體內的胰腺會產生胰島素，讓細胞開始吸收葡萄糖，立即把它儲存在肝臟或肌肉中，以備未來使用。持續的吸收工作會讓胰腺過度疲乏，發生對胰島素的排斥效果，增加罹患第二型糖尿病的風險。

**全食物吸收緩慢 有益健康**

過度精緻的食物，如餅乾、白麵包等所含的纖維質較低，大量的碳水化合物在體內很快就完全吸收，同時提高了血糖及胰島素，這種情形在液態狀態食物中更為明顯。美國波士頓兒童醫院糖尿病防治中心主任陸維格博士(David Ludwig)表示，不要以為在果汁中加入纖維質就可以解決問題，碳水化合物的存在型態與品質都是關鍵。果汁中即使含有纖維質，也可能在製作過程中受到破壞，降低了代謝作用。

陸維格博士表示，吃全水果是最好的，因為體內吸收全水果食的細胞壁保持完整的狀態，糖分可以在纖維素的保護下有效吸收。以蘋果為例，四個蘋果所含的糖分相當於24盎司，但吸收的速度緩慢，自然減緩了血糖的提升。他強調，全食物的概念非常重要，水果絕對比較好!
