#  堅果食補防寒 吃多當心游泳圈

隨著帝王級寒流襲來，東南亞迎接了近十年來的最強寒流，不僅靠北地區下雪，連很多南方平時不會有雪的地方也下起了霰。

在氣溫劇烈下降的情況下，民眾會選擇各式食材作為禦寒進補。不過除了火窩、薑母鴨、燒酒雞等食補，堅果類也是禦寒食補的妙方。

在天氣劇烈變化下，可能引發心血管疾病，食用適量堅果可以預防心血管疾病誘發。營養師楊珊珊表示，堅果的營養價值很高，是預防心血管疾病的好幫手，堅果富含單元不飽和脂肪酸及植物膽固醇，有助於增加好的膽固醇(HDL)及降低壞膽固醇(LDL)，具有減少血脂異常的護心功能。堅果類食物含有膳食纖維，及豐富的維生素B群、E，與礦物質鈣、鐵、鎂、鋅、硒等，這些都是維持正常生理機能及抗氧化的重要元素，更是素食者可增加鈣、鐵及鋅攝取的良好來源。

**堅果熱量高 吃多反危害健康**

堅果類含有大量油脂，每吃下10顆花生、8顆開心果、5顆腰果、2顆核桃，就相當於1份5g油脂等於45卡熱量。如果食用過多的堅果，將導致肥胖，對心血管反而有害。同時，高血脂及糖尿病患者也須注意攝取量，此外，堅果中磷、鉀含量高，建議腎臟功能較差的民眾少吃為宜。

**選擇原味低溫烘焙 少吃調味堅果**

衛生福利部的每日飲食指南指出，建議每日攝取油脂3-7茶匙及堅果種子類1份，如果民眾喜歡吃堅果的話，建議提高2到3份，但同時，就需要減少烹調用油或其他油脂含量較高食物，如奶類選擇低脂或脫脂奶類，肉類可選擇魚肉、里肌肉、雞胸肉等低脂的蛋白質或堅果入菜，並減少烹調用油。

楊珊珊表示，為了避免攝取過多的調味料及熱量，建議民眾選購低溫原味烘培的綜合堅果。此外，堅果類因含大量不飽和脂肪酸，遇到空氣容易氧化變質而產生油耗味，更容易受黃麴毒素的汙染。建議民眾在購買時要注意保存是否妥當、期限及來源是否標示清楚，拆封後放入密封罐置冰箱保存，並且在效期內食用完畢。
