家庭主婦自從食用油風暴後，開始檢視每天該吃什麼油最安全，吃什麼油更健康；就連椰子油，也都受到民眾高度關注！營養師指出，椰子油對健康各有利弊，就好像一體兩面，若是平常要吃椰子油，最好選用不要太精緻加工的椰子油。

**椰子油屬中鏈脂肪酸 易被人體吸收**

椰子油在最近幾年暴紅，不只是烘焙時可以食用到椰子油，就連炒菜，也有人開始使用椰子油。營養師周千欽, 台北市立聯合醫院林森中醫院區營養科表示，椰子油屬於中鏈脂肪酸，是較易被人體吸收的食用油。雖然吃椰子油有不少好處，但是卻也有壞處；就好像一體兩面。

椰子油所含有的成分中，以月桂酸最多，由於月桂酸可以增加好的膽固醇，這是其好的一面；但是，椰子油中所含有的棕櫚酸和肉豆蔻酸，卻會增加總膽固醇，這卻是其壞的一面。

**椰子油「生酮飲食」 能防失智症**

另外，根據一項研究顯示，椰子油可以延緩阿滋海默症惡化，能夠防範失智症，也致使椰子油受到不少高齡者青睞。周千欽營養師指出，此項研究即是以椰子油來進行「生酮飲食」療法；但是要注意的是，所攝取的椰子油千萬不要太過精緻，不要選用加工烘焙的椰子油。

「生酮飲食」是一種高脂肪、適量蛋白質、低醣類飲食，主要用於治療兒童癲癇。而相關研究則是發現，由於生酮飲食只攝取少量的醣類，肝臟便會將脂肪轉換成脂肪酸和酮體，酮體運經腦部，取代葡萄糖作為能量來源，進而可提供腦部營養，以達到活絡腦部訊息傳達。
