#  蕃茄洋蔥炒沙白

- 沙白 1斤
- 番茄 2個
- 紫洋蔥 1個
- 蒜頭 6粒
- 芫茜 1棵
- 蔥 1棵

- 燒酒 1湯匙
- 鹽 1茶匙
- 糖 1茶匙
- 胡椒粉 適量

1. 沙白浸泡在鹽水，讓其吐沙
2. 番茄清洗乾淨，切粒備用
3. 紫洋蔥清洗乾淨，切粒備用
4. 蒜頭去皮，拍扁備用
5. 芫茜及蔥清洗乾淨，切粒備用
6. 燒熱油鑊，下油，下蒜頭起鑊
7. 下紫洋蔥粒、番茄粒快炒
8. 下沙白炒均，灒酒，加小許清水，下糖、鹽及胡椒粉調味及拌均
9. 轉中慢火，蓋上鑊蓋焗約兩分鐘至沙白開口熟透
10. 最後加入芫茜粒及蔥粒即可上碟
