- 蟹 子 少 許
- 蝦 仁 半 斤
- 西 蘭 花 1 棵
- 花 菇 9 朵
- 肥 豬 肉 碎 少 許

### 調 味 份 量

- 生 粉 1 / 2 茶 匙
- 鹽 少 許
- 糖 少 許
- 米 酒 1 茶 匙
- 蔥 1 棵
- 薑 3 片
- 油 少 許
- 酒 1 茶 匙
- 蛋 白 1 隻
- 麻 油 少 許

1. 蝦仁去沙洗淨，以刀背拍成泥，加入調味(1)摔成膏狀，加肥肉碎拌勻備用。
2. 西蘭花洗淨出水瀝乾排放碟上。冬菇洗淨去蒂加入調味(2)蒸片刻，取出，在內側撒上生粉釀上1.，再放蟹黃，蒸十分鐘取出排盤。
3. 上湯及調味(4)煮開後勾芡，加入蛋白、麻油，淋在冬菇上。
4. 將西蘭花及冬菇排放在碟上，上湯煮滾生粉埋獻加調味料(4)，加麻油及蟹子在菜面上即成。
