- 雞 半隻
- 鮮冬菇 10-15隻
- 生薑 1塊
- 蔥 2棵

- 生抽 1茶匙
- 胡椒粉 少許
- 麻油 1/2茶匙
- 白酒 1/2茶匙
- 生粉 適量

1. 雞斬件，以調味料醃雞15-20分鐘。
2. 冬菇以清水浸洗，剪去蒂，榨乾多剩水份， 浸冬菇水留用。若冬菇太大可切成半。
3. 熱油鍋，把薑片和蔥白切段，放進鍋裡爆香。
4. 把雞肉放進鍋裡，保持大火煎，把面底均煎至金黃。
5. 把冬菇加進去， 倒入醃雞的調味料，翻炒均勻。
6. 把少量泡過冬菇的水倒進鍋裡再以大火煮。
7. 煮滾後轉慢火燜煮10分鐘左右，雞肉煮至熟透。
8. 加入蔥花翻炒均勻，把汁埋芡即成。
