 ### 汁料份量

 鎮 江 醋 2 湯 匙
 茄 汁 2 湯 匙
 豆 板 醬 1 茶 匙
 麻 油 1 茶 匙
 糖 1 1/2 湯 匙
 清 雞 湯 100 克

### 做法

1. 先 將 雞 髀 肉 切 塊 ， 用 鹽 調 味 醃 好 ， 上 薄 生 粉 ， 再 用 滾 油 炸 至 脆 身 。
2. 將 所 有 汁 料 混 成 汁 醬 。
3. 蒜 茸 、 薑 碎 、 蔥 花 炒 香 後 加 入 醬 汁 ， 再 用 粟 粉 打 稀 茨 。
4. 加 入 炸 雞 塊 及 蔥 花 ， 炒 勻 。 加 入 麻 油 即 成 。
