#  銀芽豉油王炒麵

2-3人份量

#### 材料:

- 麵餅 2 個
- 銀芽 半斤(浸水15分鐘後瀝乾)
- 蔥 3根切段

#### 調味:

- 糖 半茶匙
- 鹽 半茶匙
- 胡椒粉 適量
- 麻油 一湯匙
- 生抽 2湯匙
- 老抽 一茶匙
- 蠔油 一湯匙

做法:

1. 燒滾水，加少許油鹽(防鹼水麵黏在一起)，下麵餅，用筷子鬆開麵餅，煮約1-2分鐘，焗2分鐘; 把麵撈起瀝乾水份。
2. 燒油鑊，爆香蒜片炒至有微黃色，下麵拌炒，轉中慢火將麵炒乾身及炒出麵香;
3. 下生抽及老抽和鹽、糖及蠔油或雞汁炒一會
4. 轉中大火，下銀芽/芽菜及蔥段快速拌勻翻炒至略乾身便可上碟。
