#  芫茜皮蛋蜆肉冬瓜湯

##### 夏日炎炎，芫茜皮蛋蜆肉冬瓜湯-既簡單又消暑！可喝湯也可作湯飯

#### 材料:

- 冬瓜 半片/約300克
- 芫茜 3棵
- 皮蛋 2隻
- 蜆肉 250克 (急凍的)
- 薑 3片

**材料預備:**

- 芫茜洗淨切半備用。
- 蜆肉用鹽浸10分鐘，沖水幾次瀝乾備用；皮蛋碌殼切4片備用；薑切片備用。
- **貼士:** 蜆肉可以在油鑊先爆香蜆肉增味和不易散。

#### 做法:

- 湯窩水滾後，下冬瓜，薑，加蓋滾5分鐘,下芫茜梗/根部，蜆肉和皮蛋，加蓋滾3-4分鐘，
- 加入芫茜葉部份焗1分鐘，即成。
- (可加入適量鹽及胡椒粉調味。)

**材料好處:**
蜆:營養很豐富，可以清熱解毒，利水祛濕。可令食物中增添香味。
芫茜皮蛋湯:下火。
冬瓜:最佳消暑良品，營養價值高，價錢便宜。
