#  如何挑選牛奶？ 全脂脫脂熱量差兩倍

平時喝咖啡時，你也會加牛奶或奶精嗎？但你知道它們之間的差異嗎？張麗娟，台南市立醫院營養師，指出，牛乳就分為全脂、低脂及脫脂牛乳，以全脂奶的脂肪含量為3.8％，熱量就比脫脂奶高出2倍，尤其是市售的拿鐵產品，多選用的全脂奶，雖然較為濃醇，但熱量也較高。

因此建議可選擇脂肪含量2％的低脂奶，因牛奶脂肪多以飽和性脂肪為主，相對熱量就少了30％；張麗娟說，這時將牛乳經殺菌後去除水份，就是奶粉，若將牛乳水份蒸發60％後，就能製成煉乳，尤其加糖煉乳，更是牛乳去除水分後再加入蔗糖所製成。

其實像是奶精，乳油含量小於30％，若含量大於80％的乳油，則就為奶油，當食品內含氫化植物油成分，就是反式脂肪酸，若食用過多，就容易提高罹患心肌梗塞、動脈硬化等心血管疾病的機率。

平時在選購牛奶時，民眾可得仔細挑選標示，若成分含有氫化字眼的食品或是改成低脂奶精，就可能含有反式脂肪酸；張麗娟建議，不管喝茶或喝咖啡，建議可選擇加低脂鮮奶較為健康，另外塗抹麵包，則可選擇動物性奶油，但以少量較佳。
