#  控糖飲食 素食這樣吃才健康

各地目前罹患糖尿病的人口越來越多，在醫院常聽到病友們在煩惱不知如何控制飲食，為避免血糖飆高，想要吃素的人更是不在少數，素食飲食富含植化素、纖維素及維生素，有助於降低許多慢性病的發生，但要怎麼吃才健康？

**素食容易造成肥胖、抵抗力差**

阮綜合醫院營養師黃佳進表示，素食可區分為純素、奶蛋素及健康素3種。但研究指出，素食有其限制易導致營養失調，尤其容易造成肥胖、抵抗力差、維生素D、B12、鈣質及鐵質不足等問題。對想要茹素的病友，提供以下幾點建議作為參考。

**以川燙、蒸、滷為主 避免油炸、油煎、高油**

糖尿病友可以參考衛福部製作的素食飲食指南，均衡攝取6大類食物（奶類、主食類、蔬菜、水果、豆蛋類、油脂），不要侷限在少數食材上，避免營養失調。吃素會肥胖，原因在於攝取過多熱量。傳統素食常以油炸、油煎方式增加風味，而根莖類又屬高醣食物，長久下來造成素食者容易攝取過多熱量，烹調上可以川燙、蒸、滷為主，避免攝取油炸、油煎、高油等食品。

**蛋白質互補法 增加維生素吸收**

善用蛋白質互補法，植物中豆類及白米分別缺乏甲硫胺酸、離胺酸，屬不完全蛋白質食物，但經搭配後可提高蛋白質品質及吸收率，例如五穀+白飯、黃豆+白飯。也要記得補充礦物質及維生素。以下羅列幾種維生素來源：

**（1）維生素B12**

大多存在動物性食物中，建議長期素食者可諮詢專業人員後，適量補充維生素B12丸劑、B群或酵母製品。

**（2）維生素D**

常見於奶類、奶製品中，建議多外出曬太陽強化體內合成，幫助鈣磷的吸收，預防骨質疏鬆，尤其是全素者。

**（3）鐵質**

蔬菜（莧菜、菠菜、青江菜）雖蘊含豐富鐵質，但因人體對植物鐵的吸收率低，建議飯後攝取含維他命C的水果（柑橘類、奇異果、檸檬），有助植物鐵質的吸收。

#### 少吃醃漬及過鹹食物

另外，也要少用人工調味料、少吃醃漬及過鹹食物。素食者常食用醃製物（醬菜、泡菜、豆腐乳），但這類食物含高鈉鹽及亞硝酸鹽，是導致胃癌、腸癌的高危險因子。吃素雖然是風潮，但並非每個人都適合。糖尿病、腎臟病、癌症、痛風等病人，最好由專業醫師及營養師評估，再決定茹素方法。（文章授權提供／優活健康網）
