- 蕃茄 3個
- 薑 ３－４片
- 蒜頭 數粒
- 蔥 1棵
- 洋蔥 1隻

- 茄汁 / 茄醬 4-6湯匙

1. 黃花魚去鱗，切腹清除內臟，洗淨，抹乾水分備用
2. 蕃茄洗淨，切件備用
3. 蔥洗淨，切段備用
4. 蒜頭去皮，拍扁備用
5. 洋蔥去皮洗淨，切絲備用
6. 燒熱油鑊，下油，下薑片抹鑊均底（免煎魚時黏鑊），放入黃花魚煎香兩面至八成熟，盛起備用
7. 燒熱油鑊，下油，下蒜頭、洋蔥絲起鑊
8. 下蕃茄，翻炒，下半碗水，下小量茄汁煮均
9. 下適量糖及鹽調味，下黃花魚回鑊
10. 極速把醬汁與黃花魚拌均，先盛起黃花魚放在碟上；下小許生粉水埋茨，下蔥段拌勻後離火，將汁扒在魚身上，即可享用。
